Moroccan-Style Tofu Patties
Ingredients:
For the patties:
500g firm tofu
1/2 cup oats
1/2 bunch of parsley
1/2 bunch coriander
1 red onion roughly chopped
2tbsp olive oil
1tsp cumin
1tsp paprika
1tsp Garlic powder (can use fresh garlic too)
1/2tsp turmeric
1/2tsp chilli powder
Salt and pepper to taste
For the sauce:
1x 400g can of crushed tomatoes
1/2 cup water
1/2 onion chopped finely
1/2 bunch of coriander
5 garlic cloves
2tbsp olive oil
1 large chilli
2 carrots
1 large capsicum
1tsp of each: cumin, paprika, salt, pepper
Instructions:
Patties:
Pre-heat oven to 180 degrees.
Add tofu, oats, oil and spices to a food processor and blend until all combined.
Add parsley, coriander, chopped onion, and blend in pulses to combine.
Make round patties with slightly wet hands and place on a baking tray.
Bake the patties for 25-30 min or until golden brown.
Let cool properly before removing from tray.
Sauce:
Heat a pan with oil, add sliced garlic cloves and chopped chilli. Fry until lightly golden.
Add chopped carrots and capsicum, crushed tomatoes, water, and spices. Mix well.
Cover the pan and let simmer on low heat for 10-15min until carrots are soft.
Turn off the heat, and add the patties, gently covering them in the sauce.
Notes:
Make sure you buy FIRM tofu, otherwise this will not work!
If you don't have a food processor, you can blend the tofu and oats in a Nutribullet, then finely chop the onion and herbs and mix it all up in a bowl.
